Zero sugar blueberry jam

Ingredients
  

  • 4 cups Blueberries Rinse well
  • 2 tbsp Zero sugar sweetener of choice Use real sugar or honey if you prefer
  • 1 tbsp Lemon juice
  • 4 tbsp Chia seeds

Instructions
 

  • Rinse your blueberries well
  • Heat the blueberries, sweetener and lemon juice in a heavy bottomed saucepan on a medium heat, stirring often
  • Once the blueberries begin to cook down, you can either mash your fruit or use an immersion blender to get a smooth fruit mixture
  • Add the chia seeds and mix well to incorporate thoroughly
  • Pour your mixture into a mason jar or your container of choice
  • Allow your jam to cool completely before putting it into the fridge
  • Your jam will set well within a few hours and will be ready to use on toast, scones, or whatever makes you happy
